Looking for a simple, quick meal idea? These easy taco bowls are perfect for busy weeknights and can be adapted to your dietary needs. The recipe I will share is gluten free, dairy free and delicious.
Several months ago, my son started severely reacting to gluten and dairy. I cut out all dairy and gluten from my diet, which really rocked my world in so many ways. It seems like if you find a recipe without gluten there is always dairy in it and vice versa. Even our regular taco night wasn’t conducive to this new diet I was on. We used flour tortillas, sour cream and cheese as staples for this meal, but that was no longer an option.
This taco bowl recipe is my version of regular tacos that we have every week. It is so easy to pull together and delicious. You can absolutely use corn tortillas also for a more traditional taco dinner. You can make most of the components from scratch as I do or you can use pre-made options to cut down on prep time.

Tips For Making Easy Taco Bowls
- Use good quality beef! I use grass fed and finished beef and recommend that you do too if you can. You really can taste the difference when you use quality ingredients.
- Make salsa and taco seasoning ahead of time. I make both of these from scratch and find that making them beforehand really minimizes stress during dinner prep.
- Make lots of guacamole! This is the only reason I can live without cheese and sour cream on my tacos. Make lots to substitute for dairy if you can’t have it. Here is the recipe I use.

Cooking Tips
Brown your beef fully before seasoning and add 1/4 cup of water along with your taco seasoning to act as a binder. This will result in very yummy and flavorful taco meat.
Start rice at the beginning of your meal prep. It takes the longest, and you don’t want to wait on it to finish long after everything else is ready!
Shred the lettuce very finely. Trust me, it’s better!
Taco Bowl Ingredients
Ground Beef – I use grass fed and finished.
Taco Seasoning – I use the recipe from this cookbook.
Rice – I typically use brown rice but you can use whatever you prefer/have on hand.
Bone Broth – I use this instead of water for cooking rice. It adds some more nutritional benefits and flavor. You can always use water, too!
Sea Salt – Use plenty of high quality salt when seasoning rice. It tastes amazing and is so good for you.
Romaine Lettuce – It’s perfect for shedding and pairing with tacos.
Sauerkraut – My family loves sauerkraut on taco bowls. It adds some great probiotic benefits too!
Salsa – Freshly made salsa is always the best. I also use canned salsa if I am running short on time.
Guacamole – Make plenty. Everyone loves it and it is a great substitute for dairy if that isn’t an option for you. Here is a great recipe.
Chips – Tortilla chips are the family favorite, but we like cassava chips too.
How To Make Easy Taco Bowls
Measure rice and rinse in cold water. Transfer to a stainless steel pot and add bone broth and sea salt. stir, cover, and cook according to the instructions.
Preheat a cast iron skillet and add ground beef. Brown thoroughly and break into small pieces. Add 1/4 cup of water and taco seasoning. Mix until beef is evenly coated in seasoning mix.
Wash Romaine lettuce and shred finely.
Pull out Sauerkraut and chips and make guacamole and salsa.
Uncover rice, fluff, and serve!
